Once upon a time, Ryan Hoffman was a football star, a 6-foot-5, 287-pound left tackle at the University of North Carolina, the ironman on a team that went 11-1 and sent a half-dozen players to long careers in the N.F.L. In 1997, his final college season, he played nearly every snap. His position coach, Eddie Williamson, called him “the epitome of an offensive lineman:” physical, durable, driven.
